Al Fresco Dining - Grilled Salmon
Al Fresco dining on the beautiful Lakes Community Patio offers Residents the opportunity to enjoy a leisurely outdoor culinary experience that is sure to please the palate and stimulate the senses.
The experience begins with a beverage served in a chilled mug and the offer of a featured frozen beverage selection that changes weekly. The charming servers in their crisp lime green shirts will start your meal off with a dish of marinated olives or antipasto salad while reviewing the nightly selections.
Select from two gourmet entrée options paired with the chef’s featured side dishes. Popular entrees have included Copper River salmon, grilled duck breast and an array of light, yet tasty summer salad platters. Your order will be prepared on the courtyard grill by a talented Lakes culinary team member and served to you as you enjoy the setting sun and gentle breeze. The chef’s dessert of the evening rounds out your meal and is a perfect end to your al fresco dining experience.

Try this recipe for Grilled Salmon:
Marinated Grilled Salmon
• 1 1/2 pounds salmon filets
• 2 tablespoons balsamic vinegar
• 2 tablespoons thinly sliced green onion
• 1/4 cup soy sauce (low sodium)
• 1/4 cup brown sugar
• 1/4 cup water
• 1/8 cup vegetable oil
Directions:
Whisk together in a small bowl, vinegar, onion, soy sauce, brown sugar, water, salt and vegetable oil until sugar is dissolved.
Place salmon in a glass dish, and pour marinade over fish. Cover with plastic wrap, and refrigerate for at least 2 hours.
Preheat grill for medium heat.
Lightly oil grill grate. Remove salmon from marinade and place on the preheated grill. Grill for 10 minutes per inch of thickness or approximately 6 to 8 minutes per side, until salmon flakes easily with a fork. Garnish with lemon wedges before serving.
